Looking for a sweet summer treat? I've got just the thing! This cobbler features a streusel like topping, when combined with berries and ice cream is the perfect summer treat.

You can make this cobbler with fresh or frozen berries of any kind. I love blueberries, but strawberries and mixed berries also work well.

This is also a healthier treat, sweetened with maple syrup and coconut sugar. Top with a little ice cream or whipped cream to make it even better.

Ingredients

6 c. Berries (Fresh or Frozen)

2 tbsp. Tapioca or Corn Starch

1/3 c. Coconut Sugar

1 tsp. Vanilla Extract

1 c. Oats

1 c. Gluten-Free Flour

1 tsp. Cinnamon

1/4 c. Maple Syrup

8 tbsp. Butter, melted

Instructions

  1. Preheat the oven to 350F. Toss the berries with the starch, coconut sugar, and vanilla extract.

  2. Place the berry mixture into a 9x13 pan.

  3. Stir oats, oat flour, cinnamon, maple syrup, and melted butter together. Crumble over the top of the berries.

  4. Bake for 30-40 minutes until the top is golden brown and the berries are bubbling.

  5. Serve warm with ice cream or whipped cream.
