Bowls are quickly becoming one of my favorite meals. I've been coming up with a million amazing combinations and they're so customizable, so everyone can have a meal they like.

Chimichurri bowls are like spring. They taste so fresh and wonderful and it's a great way to utilize all the fresh herbs in your garden, because this calls for a whole bunch of parsley.

You can also mix and match additional toppings to your likes or to cater to what's left in your fridge. The chimichurri sauce can also be used on steaks and other meat.

Ingredients

Everyday Grilled Chicken

2 c. White Rice

Tomatoes, cucumbers, shredded white cheddar for topping.

Chimichurri:

1 bunch Parsley

1/2 c. Olive Oil

2 tsp. red wine vinegar

1/2 tsp. Dried Oregano

1/2 tsp. Salt

3 cloves of Minced Garlic

Instructions

  1. Cook the Everyday Grilled Chicken, or use another type of chicken (rotisserie would work well).

  2. Cook 2 cups of white rice according to the package instructions.

  3. Make the chimichurri: Chop the parsley finely and mix the parsley, olive oil, red wine vinegar, oregano, salt, and minced garlic.

  4. Assemble bowls with rice, chicken, chimichurri, and desired toppings (we love chopped tomatoes, cucumbers, avocados, and shredded white cheddar!)
