If you've spent any amount of time around here, I'm sure you've figured out by now that we really enjoy a good dip. This quick creamy queso satisfies that craving every single time. It's fantastic on tacos or bowls. Quesadillas would be leveled-up with this as a dip. Nachos too. And it's also fantastic just with tortilla chips (or straight from the spoon, let's be honest).

Ingredients

1 can Organic Diced, Fire-roasted Tomatoes and Green Chiles, drained

2 tsp. Minced Garlic

1/2 Medium Onion, diced finely

6 tbsp. Butter

3 tbsp. Gluten-Free Flour

2 1/2 c. shredded cheese (I like to use a combination of pepper jack and cheddar)

1 1/2 c. Half and Half, Milk, or Heavy Cream

Salt, to taste

Instructions

  1. Saute the garlic and onion in the butter on medium-low heat until soft.

  2. Add the flour and brown for a few minutes, stirring frequently.

  3. Mix in the drained diced tomatoes. Cook on medium heat for a minute or two, stirring.

  4. Stir in the milk/cream/half and half, cooking on low heat, until the mixture is thickened.

  5. Melt the cheese in the liquid, being careful to not allow it to boil. Add salt to taste.
