If you've spent any amount of time around here, I'm sure you've figured out by now that we really enjoy a good dip. This quick creamy queso satisfies that craving every single time. It's fantastic on tacos or bowls. Quesadillas would be leveled-up with this as a dip. Nachos too. And it's also fantastic just with tortilla chips (or straight from the spoon, let's be honest).
Quick Queso

Ingredients
1 can Organic Diced, Fire-roasted Tomatoes and Green Chiles, drained
2 tsp. Minced Garlic
1/2 Medium Onion, diced finely
6 tbsp. Butter
3 tbsp. Gluten-Free Flour
2 1/2 c. shredded cheese (I like to use a combination of pepper jack and cheddar)
1 1/2 c. Half and Half, Milk, or Heavy Cream
Salt, to taste
Instructions
Saute the garlic and onion in the butter on medium-low heat until soft.
Add the flour and brown for a few minutes, stirring frequently.
Mix in the drained diced tomatoes. Cook on medium heat for a minute or two, stirring.
Stir in the milk/cream/half and half, cooking on low heat, until the mixture is thickened.
Melt the cheese in the liquid, being careful to not allow it to boil. Add salt to taste.
